The format was there from season one, but was definitely improved by Alex Polizzi taking over from Ruth Watson. Ruth often gave sound advice but her berating manner was like that of a strict headmistress, which undoubtedly made people less receptive and audiences warm to her less. Very much the "stick" to her successor's more "carrot" like approach, although Alex can certainly be tough with hoteliers when necessary.
